Tuna Melt on Cornbread

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil

In a medium bowl, combine the drained tuna, mayonnaise, diced red onion, diced celery, chopped fresh parsley, lemon juice, salt, and pepper

Place the slices of cornbread on the prepared baking sheet.

Spoon the tuna mixture evenly onto each slice of cornbread, spreading it out to cover the surface

If desired, top each tuna-topped cornbread slice with sliced tomato and/or sliced cheese
