Lobster Tartlets

Roll out the puff pastry sheet on a lightly floured surface. Using a round cookie cutter or a glass, cut out circles of pastry, about 3 inches in diameter

You should be able to get about 8 circles. Place these circles in a muffin tin, pressing them gently to line the bottom and sides of each cup

In a mixing bowl, combine the chopped lobster meat, mayonnaise, celery, red onion, parsley, lemon juice, salt, and pepper

Spoon the lobster mixture into each pastry cup, filling them nearly to the top

Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the pastry is golden brown and the filling is heated through

Once done, remove the tartlets from the oven and let them cool for a few minutes before serving

Optionally, you can garnish each tartlet with a sprinkle of chopped parsley or a lemon wedge before serving
